It is a white of class, of an intense yellow color, with an elegant aromatic bouquet, and with a splendid sapidity of taste. The numerous recognitions achieved by this wine is evidence that our lands are endowed with the ideal conditions to produce such long-aged white wines.

Colour
Intense straw yellow.

Aroma
Full of character, with intense aroma of scotch broom, wild peach, and a marked mineral flavour.

Taste

Of notable structure and pleasantly sharp, with a long aftertaste.

To serve
The suggested serving temperature is 12-15°C. Pairs well with vegetable based appetisers, light first courses, fish and white meat second courses.

Grape variety
Riesling Renano 100%. The product originates from the 1994-1998 vine, whose shoots were selected based on careful research of the Alsatian variety.

Terroir
3 hectares of calcareous and clay-rich land, facing the west, situated at an altitude of 250 and 350 meters above sea level in Mairano di Casteggio and San Biagio di Casteggio.

Cultivation
Carried out in total absence of botritycides and synthetic products, with work on the land reduced to the minimum. The Guyot vine training system is used, which guarantees the most uniform quality. Yield per hectare: 6000 kilograms of grapes, on an average of 5000 grapevines.

Harvest
Hand-picked, with meticulous selection of bunches. During the harvest phase, dry ice is used to protect the grapes from oxidation and to avoid the rising of the temperature.
Vinification
Pellicular maceration for 18 hours at 4°C to better extract the aromas and confer structure. A “soft” pressing follows to delicately separate the skins from the must. The fermentation, in stainless steel tanks, at a temperature of 18°C, lasts for about 25 days.

Ageing
The wine is aged in steel tanks for a duration of 4 months at a temperature of 5°C to allow tartaric stabilisation.

Bottling
Carried out with maximum protection against oxygenation to retard the natural ageing process.

Storage
Kept in a special temperature-controlled storeroom, at a constant temperature of 15°C.
