Pinot Grigio d.o.c.


This wine bears witness to the ability of the land to endow the Pinot Grigio vine with its highly personal style and accent, giving a characteristic delicacy to its aromatic profile. Levriere. is distinguished by its bright yellow colour, its delicately fruity bouquet and the complexity of its taste.

Colour
Bright, straw yellow.

Bouquet
refined, intense, harmoniously expressed and reminiscent of acacia blossom and white melons.

Taste
Fairly smooth with well-integrated caloric overtones, closing with a pleasantly, tasty aftermath.

Consumption
With an ideal serving temperature of 8-10°C, Levriere blends well with light snacks, delicate first courses and fish dishes.

Vines
100% Pinot Grigio, Levriere is produced from 15 year old vines, whose root cuttings were selected on the basis of careful research into the Alsation varieties.

Terrain
6 hectares of sandy-clayey, mainly facing East, located at Mairano di Casteggio, at an altitude of 250 – 350 metres above sea-level.

Cultivation
Cultivation is implemented with no trace whatever of antibotritics or synthetic products and soil treatment is restricted to the indispensable. The Guyot cultivation method is used to guarantee maximum qualitative uniformity. The yield per hectare amounts to 600 kilos of grapes, from an average 5000 stems.

Harvest
Harvesting is carried out harvested entirely by hand, with meticulous sorting of the bunches. During the picking phase, dry ice is used to protect the grapes from oxidisation and to avoid temperature upswings.

Vinification
The must obtained from the soft pressing of the whole grapes is left to ferment in stainless steel tanks at 18°C for 25 days. After fermentation, the wine is kept 'sur lie/on yeast' for about 40 days at a constant 15°C, to achieve greater complexity of taste and personality.

Refining
Following malolactic fermentation, the wine is refined in stainless steel vats for 4 months at 5°C to stabilize the tartar content.

Bottling
Maximum, anti-oxygen protection is ensured during the bottling phase. After a final, rigorous, quality control, and at least 12 months after bottling, the wine is placed on sale.

Storage
The bottled wines are stored in a specifically appointed warehouse, air-conditioned at a constant 15°C.
