A testament to the capacity of the territory to impress a personal style and accent upon the Pinot Grigio grape, conferring on it a particular delicateness in the aromatic profile. It is distinguished by its brilliant color, the delicately fruity aroma and the complexity of flavour.

Color
Brilliant straw yellow.

Aroma
Refined, intense, expressly harmonious with echoes of acacias and white melon.

Taste

Mellow with well-integrated notes of warmth, that closes with a pleasantly sharp trail.

To serve
The suggested serving temperature is 12-15°C. Pairs well with snacks, delicate first courses and fish dishes.

Grape Variety
Pinot Grigio 100%. The product originates from the vine of 1990.

Terroir
6 hectares of sandy, clay-rich, predominantly facing the east, situated at an altitude of 150 and 200 meters above sea level in Mairano di Casteggio.

Cultivation
Carried out in total absence of botritycides and synthetic products, with work on the land reduced to the minimum. The Guyot vine training system is used, which guarantees the most uniform quality. Yield per hectare: 6000 kilograms of grapes, on an average of 5000 grapevines.

Harvest
Hand-picked, with meticulous selection of bunches. During the harvest phase, dry ice is used to protect the grapes from oxidation and to avoid the rising of the temperature.
Vinification
The must achieved by soft pressuring of the whole grapes are left to ferment in stainless steel tanks, at a temperature of 18° for 25 days. When the fermentation is done, the wine is conserved “sur lie” for about 40 days at a constant temperature of 15°, to give a greater flavour complexity and to personalise it.

Ageing
The wine is aged in steel tanks for a duration of 4 months at a temperature of 5°C to allow tartaric stabilisation.

Bottling
Carried out with maximum protection against oxygenation to retard the natural ageing process.

Storage
The bottled wines are conserved in a special temperature-controlled storeroom, at a constant temperature of 15°C.
