Brut Riesling


We use only Riesling grapes for the Peu Moussant Charmat light, appealing and bright spumante. Bubbles with a great sapidity, liveliness and an elegant and refined appearance entice the even the most glamorous consumer and is fit for even the most refined tables.

Color
Straw-like yellow, brightened by the perlage finish.

Aroma
Intensely fruity, with a dominant newly ripened apple flavour.

Taste

Appealing for the lively balance of bubbles.

To serve
The suggested serving temperature is 8-10°C. Perfect for aperitifs and antipasti, it pairs well with risotto, delicate fish-based second dishes and white meat.

Grape variety
100% Riesling Renano. The product is derived from vines from 2003.

Terroir
2.5 hectares of land woven with chalky, clay-rich soil, facing the east and west, between 150 and 200 meters above sea level in Mairano di Casteggio.

Cultivation
Carried out in total absence of botritycides and synthetic products, with work on the land reduced to the minimum. In the training of new plants, actinobacteria” were used, natural fungi that protect the young roots from disease. The training system is Guyot, that guarantees the most uniform quality. Yield per hectare: 8000 kilograms of grapes, on an average of 5500 grapevines.

Harvest
Hand-picked, with meticulous selection of bunches. During the harvest phase, dry ice is used to protect the grapes from oxidation and to prevent increases in temperature.
Vinification
The must extracted from light pressing of the whole grapes is left to ferment in stainless steel tanks at a temperature of 18° for 25 days. When the fermentation is complete, the wine is conserved at a constant temperature of 10°, until the actual champagnification stage.

Ageing
The champagnification phase takes place in fermentation tanks (pressurised) at 15 ° and lasts for one month. Its bubble content (4 atmospheres) mark it out as a “satin” spumante and gives it the name Peu Moussant.

Bottling
Carried out with maximum protection against oxygenation to retard the natural ageing process.

Storage
Kept in a special temperature-controlled storeroom, at a constant temperature of 15°C.
