From pure Croatina grapes, it is produced following a systematic and refined production process. Cheerful, exuberant, straightforward, full of energy and very enjoyable, this Bonarda represents local tradition and enhances the flavours of even the tastiest dishes. An excellent household wine that is a pleasure to drink.

Color
Ruby Red, sparkling and brilliant.

Aroma
Intensely fruity and fragrant (marasca cherry), very appealing.

Taste

Complex, exuberant, of ripe completeness and harmony, immediate.

To serve
The suggested serving temperature is 12-15°C. Pairs well with salami, risotto, boiled meats .

Grape variety
Croatina 100%. The product originates from a historical vine, recently replanted.

Terrior
11 hectares of clay-rich land, predominantly facing the southwest, situated at an altitude between 150 and 200 meters above sea level in Mairano di Casteggio.

Cultivation
Carried out in total absence of botritycides and synthetic products, with work on the land reduced to the minimum. In the training of new plants, during the planting of the vines, “actinobacteria” were used, natural fungi that protect the young roots from disease. The training system is Guyot, that guarantees the most uniform quality. Yield per hectare: 9000 kilograms of grapes, on an average of 5000 grapevines.

Harvest
Hand-picked, with meticulous selection of bunches. During the harvest phase, dry ice is used to protect the grapes from oxidation and to prevent an increase in temperature.
Vinification
The fermentation with maceration lasts 4 days at a temperature of 32°C; the wine is then conserved at a constant temperature of 15°C, all the way until the start of the real re-fermentation stage in a fermentation tank.

Fining
After about 20 days of carbonating, the wine stands in a second fermentation tank for a month before bottling.

Bottling
Carried out with maximum protection against oxygenation to retard the natural ageing process.

Storage
Kept in a special air conditioned storeroom, at the constant temperature of 15°C.
